Sunshine Cake: With Barley Flakes & Whole Wheat

Cakes are always a favourite item for everyone and it goes for any occasion whether as desserts, afternoon bites with coffee, or breakfast. This Sunshine Cake made with the goodness of Almond, Barley Flakes, and Whole Wheat flour would be a perfect addition to your morning coffee. Especially kids are just going to love the surprising twist of Egg inside it. Others are going to drool over the combination of impeccable taste and nutritional value at the same time. (I saw the actual recipe somewhere in social media, but tried to blend it on my own way and added some healthy ingredients)
    
Ingredients:
Eggs: 3 nos.
Whole wheat flour: 1 cup
Barley flakes: 3/4th of a cup
Sugar: 2-3 tablespoons
Hot milk: 1 cup
Baking powder: 1 teaspoon
Vanilla essence: 2-3 drops
Sliced almond: 5-6
Butter: 1 tablespoon (OR 2 tablespoons of oil)
Salt: 1 pinch

Preparation: 45 minutes to an hour, serves 4 persons.

Step 1: In a mixing bowl break one egg, add sugar, and beat it. Keep remaining eggs aside for later. Now add hot milk into it, but don’t add the entire milk at a time. Adding hot milk suddenly will cook the egg. So first add one spoon of milk and whisk, then add a couple of more spoons of milk while whisking and slowly add the entire milk and continue whisking. Crush the barley flakes with hand and add it into the bowl. Add 2/3 drops of vanilla essence and whisk it well for a minute.

Step 2: In a separate bowl take 1 cup of wheat flour, add a pinch of salt, one teaspoon of baking powder and mix it. Now add the flour to the other bowl, add butter or oil and whisk it into a fine batter.

Step 3: Keep the oven for preheating at 200 degrees Celsius. Meanwhile, take a baking mould and grease the bottom and sides with butter or oil. Place a butter paper at the bottom and grease the butter paper as well. Now, pour the cake batter into the baking mould and add sliced almonds on top.


Now follow the steps as shown in the below images. Take the remaining eggs that were kept aside. Break one into a small bowl and carefully pour it on one side of the batter. Make sure the yolk is not broken. Pour the second egg on the other side the same way. Carefully place the baking mould into the microwave and bake it for 45 minutes in 200 degree Celsius.
After 45 minutes take the cake out from the oven. To check the cake whether it is baked/cooked inside or not, poke at the middle of the cake with sharp metal or wooden stick, if it comes out dry that means the cake is perfectly baked. If not, bake it for 10 more minutes.

Once done cut it in the middle and diagonally. Garnish with some dry fruits and serve hot with honey, date syrup or maple syrup.
