Foxtail Millet (Koni dhaan) Kheer

Foxtail millet is a very common species of millet that widely grows in India after Bajra (Pearl Millet), which also comes with great health benefits. I always saw my mother preparing a variety of items like- pulao, khichri, and sweet dishes with this super ingredient since my childhood, and foxtail millet kheer was the most delicious item that I loved out of all. For me, it is a very sophisticated dessert that is easy to make with minimum ingredients. Check this out!

Ingredients:
Foxtail millet: Half cup (soak for 2-3 hours)
Full cream milk: 1500 ml (approx.)
Condensed milk: 200-300 gm
Green cardamom powder: Half teaspoon
Dry fruits: Cashews, almonds, raisins, etc.
A pinch of saffron (optional)

Serves: 6-8 persons

Step 1: Boil milk in a large saucepan. Keep the gas on low flame and continuously stir the milk. Wash the soaked foxtail millet and add it to the milk. Cook it on low flame until it’s half-cooked.

Step 2: Add condensed milk as per your preference for sweetness followed by half a teaspoon of green cardamom powder and a very little pinch of salt. You can reduce the amount if you don’t like the strong flavour of cardamom.

Step 3: Let the millet cook completely until the milk is reduced and thick. In the end, add roasted dry fruits and a pinch of saffron. Mix it well before serving.

Let it cool down and enjoy, you can keep it in the refrigerator and serve it chilled. Garnish the kheer with some extra dry fruits and fresh malai (cream)before serving.

Taste tip: If you add a pinch of salt to any sweet item you make, it will instantly enhance the taste of the dish.
