Cheesy Cauliflower Stuffed Omelette

Eggs are the tiny pack of nutritional wonder that contains high-quality protein, vitamins and minerals essential for the human body. Here is another interesting take on eggs, a quick, delicious and wholesome breakfast option, just perfect for starting the day. You will fall in love with this fluffy omelette stuffed with lots of cheese and cauliflower that will make you drool in every bite you take.

Ingredients:

  1. 1-2 nos. eggs
  2. Half cup cauliflower florets (boiled for 2-3 minutes and grated)
  3. Grated cheese: Half cup
  4. One cheese slice
  5. 3-4 slices of a tomato
  6. Salt and pepper (as per taste)
  7. Scallions (for garnishing)
  8. Butter/ olive oil
  9. 1/4th cup milk (optional)

Preparation: 20 to 30 minutes. The above measurements of ingredients are for one serving. Double the proportion as per the persons to serve.

Step 1: Mix the grated cauliflower and cheese in a bowl with a pinch of salt and pepper. Beat the egg/eggs in a separate bowl along with some milk and sprinkle a pinch of salt and pepper as well.

Step 2: Heat a pan and add one teaspoon butter and drizzle a few drops of olive oil. The oil will prevent the butter from burning. Now add the beaten egg and let it spread all over the pan.

Step 3: Add the cheese and cauliflower mix on one side of the omelette followed by the tomato slices and place the cheese slice on top of it. 

Step 4: Cover it with a lid for a minute. Now fold it from the other side very carefully and turn it over. Let it cook for a minute on low flame and transfer the omelette to the serving dish. Garnish with chopped scallions and serve it hot.
