Ingredients:
Sweet potato: 250 gm (Boiled)
Eggs: 3
Grated cheese: 4 tablespoons
Dry parsley: Half teaspoon
A pinch of ground black pepper
A pinch of salt
Butter: 1 tablespoon
Preparation: 15-20 minutes, serves 2 persons.
Step 1: Mash the boiled sweet potatoes in a mixing bowl. Add the above ingredients except for butter and mix it well.
Step 2: You can make the omelette in two batches as per convenience. Heat a pan and add one teaspoon of butter. Once hot add half a portion of the omelette mix and spread it across the pan gently. Cover the lid and let it cook on low flame for 2 minutes.
Step 3: Check the bottom of the omelette carefully flipping a part of it with a spatula. Once you get a crispy golden layer gently turn it upside down and cover again. Let it cook for another 2 minutes on low flame until the other side turns crispy and golden brown in colour. Once done take it out on a plate and set it aside.
You can cut the omelette in slices if you want while serving. Toss some scallions over it and serve hot with some tossed veggies and honey mustard sauce.
