There would be hardly anyone who doesn’t like Mango! The taste and versatility of use make this seasonal delight the king of all fruits. Whether you make Mexican salsa, Indian chutney, use it in desserts, smoothies, or cakes, Mango stands out everywhere. So, in this mango season, I tried a different version of the famous Thai dessert, Mango Sticky Rice, or you can call it an Indo-Thai avatar of the same. This Red Sticky Rice pudding is sweetened with jaggery, generously topped with chunks of irresistible Alfonso and dry fruits. This concoction of the velvety pudding and oozing mango is so delightful that you wouldn’t mind skipping dinner.
Ingredients:
Sticky rice: 1/4th of a cup (soak for 2/3 hours)
Milk: 1 litre (full cream)
Fully Ripe Mango: 1 cup (diced)
Jaggery powder: 1 and a half cup
Cinnamon powder: 1 pinch
Nutmeg powder: 1 pinch
Chopped Almond: For garnishing
Raisins: For garnishing
Preparation: 1 to 2 hours, 4-5 servings.
Step 1: Making the pudding
Put the pot of milk on the gas and bring it to a boil. Drain water from the rice and add it into the milk pot. Keep stirring it on low flame for about half an hour until the rice is cooked and the milk is reduced. Keep collecting the cream from the sides and mix it with the milk. Add jaggery powder and let it simmer until you get a slightly thick consistency.
After 45 to 60 minutes, you will get a thick creamy texture. At this stage add cinnamon and nutmeg powder (a pinch of each), followed by a 2/3rd portion of the dry fruits (Almond & Raisins). Give it a gentle stir and turn the gas off. Let it cool down and come to room temperature.
Step 2: Serving
Use a dessert glass or bowl for serving. With the help of a deep ladle, fill half of the glass with the pudding. Now carefully place two spoons of the diced mango over the pudding. If you have a blow torch, caramelise the top of the mango slightly. Skip this if you don’t have a blow torch. Finally, toss some more chopped dry fruits over it.
Keep it in the fridge for some time and serve it chilled.
