Chocolate & Coconut Cookie Rolls

Freshly baked cookies made with some handpicked healthy ingredients would be a desirable addition for those who are trying hard to keep themselves away from these tiny teatime bites for the sake of health. So, here I come with another experiment with these butter-less cookies made with multigrain flour stuffed with a coconut and chocolate filling to feed your inner child. One can adjust the sugar level according to their personal preferences or use any alternate of sugar. Try these flaky and swirly cookies baked to perfection that are crumbly outside and soft inside and can be enjoyed along with a hot cup of tea or coffee any time. Check these out!

Ingredients:

Multigrain/ all-purpose flour: 2 cups
Eggs: 2 nos.
Curd: 3 tablespoons
Salt: 1-2 pinches
Grated coconut: 1
Cocoa powder: 3 tablespoons
Sugar: Half cup (or as per preference)
Cinnamon powder: 1 teaspoon

Preparation: Approx an hour, multiple servings.

Step 1: In a mixing bowl take the flour, add salt and mix it. Add the eggs and curd, mix the ingredients well and knead it into a soft dough. If the dough is too sticky sprinkle some flour and apply few drops of oil in your hand. Knead it until you get a fine soft dough. Cover the dough with a clean kitchen towel and keep it aside for half an hour.

Step 2: Heat a pan and add the grated coconut, cocoa powder and sugar. You can add half a cup of milk into it to dilute the taste of the chocolate powder. Mix it well in medium to low flame. Sprinkle the cinnamon powder and saute the mixture for 2-3 until the moisture is gone. Once done keep it aside.

Step 3: After half an hour transfer the dough on a rolling board. Knead it one more time for a minute and divide it into two portions. Make a flatbread of about 2-3mm thickness out of the dough. Now spread the coconut mixture on each flatbread with a spoon and roll it. See the pictures for clarity. Apply some water on the edge of the flatbread and close it properly.

Step 4: Keep the oven to preheat at 200 degrees. Grease a baking tray with few drops of oil or melted butter, place butter paper on it and grease the paper as well. Now cut the rolls in slices (approx in 1-inch size) as shown in the picture and place the pieces one by one on the tray. Beat one egg in a separate bowl and apply the egg wash over the slices including the sides with a silicone brush. Bake them at 200-degree temperature for 45 minutes.

Once done let it come to room temperature and keep it in an airtight container. Serve it along with a hot cup of tea or coffee.
