Jackfruit Halwa

Raw Jackfruit curry or dry fry is one of the favourite dishes in India and considered as the plant-based meat for the vegans or vegetarians with lots of fibre and many nutritional benefits. But, there is another great way to make Jackfruit as a dessert that I recently discovered. Jackfruit Halwa is a very popular sweet dish in South India and prepared in many ways. So, I tried this recipe slightly going away from the traditional approach adding a twist of my own. This delicious dessert recipe is absolutely a sublime treat for all the Jackfruit fans. Ingredients:
Ripe Jackfruit: 1
Multigrain flour: Half cup
Jaggery or Sugar: 1 cup
Milk: 1 cup
Ghee (Clarified Butter): 4 tablespoons
Cardamon powder: 1 pinch
Dry fruits: For garnishing (Chopped cashew nuts and raisins)

Preparation: 30 to 45 minutes, serves 5-6 persons.

Step 1: Remove the seeds and roughly chop the Jackfruit pods.

Step 2: Put the chopped Jackfruit pods into a pressure cooker. Add a cup of water and pressure cook for 5-8 minutes. After 4-5 whistles turn the gas off. Once the steam is out, transfer the boiled Jackfruit pods into a bowl. With the help of a potato masher or hand blender mash or blend the pods into a thick pulp.

Step 3: Heat a wok or pan and add 2 tablespoons of ghee. Add the flour, fry it for 2 minutes and then add the jaggery or sugar. Mix it well in medium heat. Add the milk and keep stirring to prevent it from lumps.

Step 4: After 2-3 minutes add the Jackfruit pulp and mix it well. Add the remaining ghee and continuously keep stirring the halwa until the moisture is gone and turns light golden brown. Add the chopped dry fruits and a pinch of cardamom powder for fragrance. Turn the heat off once the halwa stops sticking to the pan.

Serve this lip-smacking Jackfruit halwa hot as a dessert after meals or as breakfast along with bread.
