Sweet Potato Pancakes- A Savoury Version

Sweet potatoes are one of the most popular root vegetables that are prepared in many ways all over the world. Either you roast it, bake it or boil it, this superfood rich in beta carotene and vitamin A is going to contribute to your well-being and vitality if added to your regular diet. These savoury sweet potato pancakes are one way to complement your day with a healthy twist that also tastes great. Have it with a soft and sultry poached egg or some crispy home-made bacon for a unique flavourful experience.

Ingredients:
Sweet potatoes: 2 (Grated)
Wholewheat flour: Half cup
Eggs: 2
Chopped onion or spring onion: Half cup
Green/ Red chillies: 1
Kalonji (onion seeds): 1 pinch (Optional)
Garam masala powder: 1 tablespoon
Chopped coriander leaves: Half cup
Baking powder: 1 teaspoon
Salt: As per taste
Oil: For shallow frying
Water: To make the batter

Preparation: Half an hour to 40 minutes, serves two persons.

Step 1: Mix all ingredients except oil in a bowl. Add water and make a thick batter.

Step 2: Heat a pan or tawa, add few drops of oil and spread it with a brush or spatula. Lower the flame and add 1-2 tablespoons of batter for one pancake. Spread it gently with the bottom of the spoon to flatten it and cover it to cook. Cook each side 1-2 minutes or until it turns golden brown with a crispy outer layer. Once done, set it aside and make the remaining pancakes in the same process.

Serve the pancakes hot along with a poached egg on top and drizzle some honey mustard sauce for some extra flavour.
