Experiments can go beyond the conventional way. You might have had fried rice in Chinese, Japanese or Thai style, but this “Desi Indian Style” Prawn and Mint Fried rice is another delicious and easy-to-prepare recipe that you might want to try next. As a child, I had always seen my mother fry the leftover rice for the next day’s breakfast or make a quick snack item to avoid wasting food. So, I gave it a try and added some exciting ingredients to make it more refreshing and delectable. The fresh flavour of mint accented by the exotic taste of prawns and crispy fried onions on top has elevated this simple dish to an exceptional one. I used freshly cooked rice in this recipe, but one can make it with leftover rice as well.
Ingredients:
Prawn: 150 gms (marinate with salt, black pepper and l tablespoon lime juice for 30 minutes)
Mint leaves: 1 cup
Jeera Rice: 1 and a half cup
Ginger: 1 tablespoon finely chopped
Garlic: 1 tablespoon finely chopped
Onion: 2 medium size (finely sliced)
Fresh lime juice: 2-3 tablespoons
Black pepper: 1 teaspoon (rough ground)
Garam masala powder: 1 teaspoon
Salt: as per taste
Oil: 2-3 tablespoons
Preparation: Half an hour to 45 minutes, serves 3-4 persons.
Step 1: Cook the rice and keep it aside. Drizzle a few drops of oil and sprinkle a pinch of salt while cooking the rice. Make sure the rice is not too mushy, so add the water accordingly. Or you can use an electric rice cooker to avoid it.
Step 2: Heat a wok/ kadhai and add 2-3 tablespoons of oil. Once the oil is heated, add marinated prawns and saute for a few minutes until they turn red. Keep the gas in medium flame.
Add chopped ginger, garlic and stir it for a minute. Add chopped onions and keep stirring until the onions become translucent.
At this stage, add garam masala powder, black pepper and salt as per taste. Stir it for 2-3 minutes and add the mint leaves followed by the cooked rice. (You can add some curry powder and extra chilli flakes to make it more spicy while adding the spices.)
Finally add the lemon juice, mix it well with the prawn rice and stir fry it for another 4-5 minutes in medium heat.
Once done, garnish it with some crispy deep-fried onions and serve hot along with some fresh salad.
