No one can imagine celebrating Diwali without sweets, isn’t it? But observing the current health trend of people sometimes, the celebrations become challenging for us to keep a track on the health of our near and dears. Ingredients:
Bananas: 2
Eggs: 2 (Optional, skip if vegetarian)
Multigrain flour: 1 cup
Milk: 2-3 tablespoons
Baking powder: 1 teaspoon
Nigella seeds (Kalonji): 1 teaspoon
Sugar: 1 tablespoon
Oil: For frying
For Jaggery Syrup:
Water: 500 ml
Jaggery powder: 2 cups
Green cardamom: 2
Preparation: 45 minutes to one hour.
Step 1: First, prepare the jaggery syrup. Add jaggery and water in a pan and bring it to boil. Add two pods of cardamom and simmer it in medium flame for 15 to 20 minutes or until the syrup is ready. Keep stirring the syrup occasionally throughout the process. To check, touch it with your fingertips, slightly sticky means it is done. Turn the gas off and keep it aside.
Step 2: For the batter, first mash the bananas with the help of a fork. Now add mashed bananas, eggs, one tablespoon sugar, nigella seeds into a bowl and whisk it. In a separate bowl mix flour and baking powder and add it into the batter mix. If the batter is too thick, add 2 to 3 tablespoons (or as required) of milk. Mix the batter well to make it smooth.
Step 3: Heat a pan and add cooking oil for frying. Once the oil is hot enough lower the flame as much as you can. Take one tablespoon of the mixture and drop it into the pan for frying. According to the size of the pan keep adding the portions. Fry both sides of the cakes until it turns dark brown and cooked from inside, which might take around 5-7 minutes. Keep turning the pieces frequently to avoid burning. Once done strain the oil and immediately dip the cakes into the jaggery syrup and cover it. Follow the same process to make the remaining cakes.
Step 4: Once all the cakes are in the jaggery syrup, put the pan on the gas once again, warm it for a minute and turn the gas off. Cover it at least for an hour and let the cakes absorb the syrup completely. Keep turning the cakes occasionally. It will make the cakes softer, and the syrup will reach inside the cakes to make it soft and sweeter. Once done garnish with some dry fruits and serve.
Prefer to serve hot. If it gets cold, warm it in the microwave for a minute before serving.
