Ingredients:
Eggs: 2
Milk: 1 cup
Multigrain flour: 3/4th of a cup
Pearl millet (Bajra) flakes: 3/4th of a cup
Sugar: 3/4th of a cup (white or brown, as per choice)
Cocoa powder: 2 tablespoons
Chocolate chips: Half a cup
Cinnamon powder: 1 teaspoon
Baking powder: 1 teaspoon
Butter: 1/4th of a cup
Preparation: Approx an hour.
Step 1: Break the eggs in a mixing bowl, add sugar, butter and whisk it for two minutes. Add the milk and whisk it again. Mix flour, chocolate powder, baking powder in a separate bowl or a sieve, add a pinch of salt in it and add it into the mixing bowl for the batter. Whisk it well until it becomes smooth.
Step 2: Once the batter is smooth enough add the Pearl millet (Bajra) flakes, cinnamon powder and chocolate chips. Mix it well with the batter for a couple of more minutes and keep it aside.
Step 3: Prepare it for baking. Use paper cups or silicone cups for baking. Grease the cups with butter and place it into a baking tray. Meanwhile preheat the oven at 200-degree centigrade. Pour the batter in each cup with a spoon covering 3/4th of the cup and place it into the oven. You can add some chocolate chips on the top of the cups before baking. Bake it in 200-degree centigrade for about 45 minutes.
Add sour cream and some rainbow sprinkles as the topping just for decoration if you want and serve these healthy muffins hot with tea or coffee. Excellent for breakfast, afternoon snacks and a dessert for any occasion.
