Handmade noodles: Street Style

We all love street foods and occasionally try to grab a bite while passing by a fast food stall at the corner of the street. But despite the tempting smell and taste, at times it might cause some health hazards if the food is not prepared hygienically. So, what could be more delicious than a street style food prepared in a healthy way right at home! Here is a street style noodles preparation with a pile of crunchy vegetables and prawns bathed in a zesty stir fry sauce. Try these whole wheat handmade noodles and I am sure you will regret buying noodles from the market so far because the taste of the fresh homemade noodles is just incredible!  


Ingredients for noodles:
Whole wheat flour: 2 cups
Vegetable/ olive oil: 1 tablespoon
Egg: 1 (optional)
Salt: 1 pinch
Water: for kneading
How to make the noodles: Take the flour in a bowl, add a pinch of salt, one tablespoon of oil, and break an egg over it. Use your hand to mix it. Add a little water to knead and make a soft dough. Divide the dough into small balls and make chapattis from each. Cut the chapattis into thin strips and put it into boiling water. Boil it for two minutes and take it out in a strainer and wash the noodles thoroughly in running water, then immediately put it into chilled/ice water for a minute. After a minute strain the water completely, drizzle a few drops of oil to avoid sticking and keep it aside.


Ingredients for the stir fry:
Prawns: 100 gm
(marinate with a pinch of salt and pepper)
Diced bell pepper: 1 cup
Finely sliced carrot: 1 cup
Chopped cabbage: 1 cup
Chopped onion: 1 cup
Chopped ginger: 1 tablespoon
Chopped garlic: 1 tablespoon
Black pepper powder: 1 teaspoon
Dried red chillies:  2-3
(de-seeded and cut in small rings)

Oil: 3 tablespoons (Olive oil or Sesame oil)


Stir fry spices and sauce:
Soy sauce: 1 tablespoon
Fish sauce: 2 tablespoons
Oyster sauce: 1 tablespoon
Vinegar: 1 tablespoon
(Mix all the sauces in a small bowl and keep it ready)


For garnishing:
Chopped coriander: Half a cup
Chopped spring onion: Half a cup



Stir fry: Heat a pan and add 2 tablespoons of oil. Once the oil is hot enough add marinated prawns and shallow fry each side for 2-3 minutes in medium flame. Take the prawns out on a plate and keep it aside.


Now in the same pan add one more tablespoon of oil and dried red chillies, chopped ginger, and garlic. Stir it for some time and add the vegetables and onion together. Stir it for a minute in medium flame, sprinkle a pinch of salt and pepper over it while stirring. Then add the prawns and saute for a couple of minutes. Add the boiled noodles and mix it well with the vegetables and prawns. Add the stir fry sauce and give a good stir in high flame. Don’t let it burn, keep stirring and once the sauce is completely mixed with the noodles and vegetables turn the gas off.


Garnish with chopped coriander and spring onions and serve hot. Place a fried/ poached egg on the noodles while serving to add an oozing flavour into it.
