Pitha: An Assamese Delicacy (Part- 2)

Since this is the continuation of my previous post of the Pitha series, I hope you have already gone through part-1. If not, check the recipe of Tekeli Pitha now. The next preparation is called Patishapta (Sweet Crepe), which is also one of the famous sweet dishes prepared in West Bengal, but the ingredients are slightly different. Here is how Patishapta is made in Assam. As I said the ingredients are the same as Tekeli Pitha. The main ingredients are Rice Flour, Coconut and Jaggery mix (for filling). But in this preparation, I have added half a cup of fine flour (maida) to avoid it from breaking.


Patishapta (Sweet Crepe)- Ingredients:
Rice flour: One and a half cups
Coconut + Jaggery mix (for filling)
Salt: 1 pinch
Oil: for brushing
Fine flour (Maida): Half a cup (optional)

This preparation is for 3-4 people.
Step 1: Take one and a half cups of flour and add half a cup maida with it. Add a pinch of salt and mix it well. Add water to make the batter. The consistency of the batter should be mildly thick so that it can be spread easily to make a thin layer of crepe.


Step 2: Heat a Tawa or pan and brush it with a few drops of oil. Lower the flame. Pour the batter into it with a deep ladle and spread it immediately to make a round thin layer. Cover it for a minute to cook. Add the coconut and jaggery mix as filling and fold it as shown in the picture below. Press it gently and take it out in a plate. Make the remaining pithas following the same steps.


As I mentioned earlier, the filling can be made with roasted sesame seeds and jaggery as well. Try both the options and enjoy this authentic Assamese delicacy with a cup of hot tea.
