Our food habit has a direct impact on our body and mind. A healthy and colourful platter can uplift your mood instantly. Also, studies say people tend to eat more unhealthy food when they are in a tantrum. So, let there be only happiness and health and chuck those unhealthy food habits out. Here is my version of a salad platter that can cheer your mood instantly. A ‘double protein salad’ with assorted colourful vegetables, chickpeas, and eggs in a creamy and succulent dressing.
Salad ingredients:

Chickpeas: 2 cups (soaked for 8 hours and boiled)
Eggs: 3 hard-boiled (separate yolks and cut in long slices)
Red bell pepper: 1 cup chopped
Yellow bell pepper: 1 cup chopped
Baby cucumber: 1 cup chopped
Lettuce: 1 cup, roughly shredded
Tomato: 1 cup sliced
Onion: 1 cup chopped
Coriander leaves: 1 cup chopped
Mustard sauce: 1 tablespoon
Curd: 3 tablespoons
Vinegar: 2 tablespoons
Lime juice: 2 tablespoons
Honey: 2 tablespoons
Salt: as per taste
Pepper powder: Half a teaspoon
Virgin olive oil: 3 tablespoons
For garnishing:
Boiled egg yolks
Cheese
Preparation: Half an hour, serves 3-4 persons.
Take a large bowl and mix all salad ingredients into it except the eggs. Take a separate small bowl and add the ingredients for the salad dressing one by one. Whisk the dressing well and pour it over the salad. Give a good mix. Then add the sliced boiled eggs and mix it gently. Serve the fresh salad immediately in the serving plates. To garnish the platter, crush the boiled egg yolks gently with hand put it over the salad plates. Same way add crushed cheese and toss some chopped spring onion on top. Enjoy the refreshing and juicy ‘double protein salad’.
