Sweet potato is one of the highly nutritious root vegetables with a great source of fiber, vitamins, and lots of minerals. Adding sweet potatoes in your regular diet can help fight many chronic diseases and boost immunity. So, here is a power-packed breakfast preparation with sweet potatoes and eggs that will keep you energetic throughout the day. Check out this delicious ‘egg and sweet potato wrap’. Ingredients:
4 eggs
Sweet potatoes (2, boiled and chopped)
Vanilla essence (2 drops)
Sugar (1 tablespoon)
Honey (2 tablespoons)
Date syrup (2 tablespoons)
Grated Cheese (2 tablespoons)
Butter
Preparation: 15 minutes to half an hour. Serves two persons.
Break the eggs into a bowl. Add sugar, vanilla essence and whisk it well. Now, heat a pan and add one teaspoon butter. Since this is preparation for two persons, make it in two batches. Once the butter is hot lower the flame and pour half of the beaten egg into the pan. Spread the egg in the entire pan to get a thin layer. After a few seconds, once the upper side of the egg is cooked, spread half of the chopped sweet potato in one side of the egg spread (follow the steps shown in the below picture). Then pour honey and date syrup (one tablespoon each) over the potato, add half of the grated cheese, and wrap it. Fold both the open sides and flip very carefully. Press the wrap gently and take it out from the pan. Make the second wrap the same way.
